Most people when they think of a safari holiday conjure up an image of ‘roughing it in the wild’. Well they couldn’t be more wrong! One of the most exciting aspects of Kenyan food is its diversity of flavours with a combination of Indian, Arab, European and Pakistani foods. The meat is outstanding and due to its proximity to the Indian Ocean, the fish and seafood is exquisite.
Here is a delicious recipe from luxury safari lodge, Elsa’s Kopje in Meru National Park.
Elsa’s Kopje Danish Layer Cake
Ingredients:
1.5 stick of butter
¾ cup caster sugar
¾ cup plain flour
2 tsp cinnamon powder
1 egg
¼ cup plain chocolate
1 cup double cream
1 tbsp caster sugar
Directions:
Preheat your oven to 350 degrees Fahrenheit.
Mark an 8 inch circle on 5 pieces of baking parchment and place onto baking trays ready for later. Cream the butter and sugar until pale and fluffy. Then, beat in the egg and fold in the sifted flour and cinnamon. Spread the cake mixture onto the circles marked on the baking parchment. Bake for 5-7 minutes, until golden. Carefully peel away the parchment and leave the cakes to cool.
Break the chocolate into small pieces and place in a bowl with the butter. Melt them together by placing the bowl over a pan of hot water, making sure the bowl is secure and will stay in place. Spread the chocolate and butter mixture over the top of one of sponge rounds.
Whip together cream and 1 tablespoon of caster sugar and spread over remaining sponges. Layer on top of one another, finishing with a chocolate covered round and serve.

This looks absolutely amazing. In fact, I can’t wait to get home and try it out.
I was recently in Namibia on a luxury safari with Travcoa and couldn’t believe how comfortable we were the entire time. There’s certainly no roughing it out there! And the food – oh my goodness… you aren’t kidding when you talk about the diversity of flavors available. Meals were nearly my favorite part of the trip!
